The human body cannot synthesize vitamin c endogenously so must be taken in as a dietary component. Many fruits and vegetables contain vitamin c but excess amount of heat during cooking can destroy it completely since it easily leaches into the cooking water being a water-soluble vitamin. At high temperature, in the presence of sunlight and oxygen in air, vitamin c reacts and it is oxidized.
